The Healthy Alternative to Classic American Grilled Cheese

A grilled cheese sandwich can hit the spot and is a great comfort food at times. Why not make this something you can have even when eating healthily?!

The tofu gives this dish added protein, some iron, and approximately 22% of the recommended daily amount of calcium. This recipe uses nutritional yeast to increase its nutritional value as well as making it taste yummy. Nutritional yeast can be used in place of cheese in many dishes and typically is vegan, gluten-free, as well as low fat. By skipping the cheese and using nutritional yeast or even adding a vegan cheese, you can have grilled cheese on a vegan diet. Using Ezekiel bread or a gluten-free bread is a healthier choice than the traditional white bread. The coconut oil (the healthier popular choice at the moment) provides healthy fats. The added vegetables help provide more nutrients and go toward your five-a-day.
