Vegan Patriotic Flag Dessert

Vegan Patriotic Flag Dessert

 

Not only is this delicious flag dessert vegan, it is also gluten-free and uses honey or agave nectar for sweetener so it’s not super sugary either!! This dessert does it all. Much healthier than a cake with frosting. Much tastier. Vegan, gluten-free and no added sugar, all in the form of the stars and stripes!

You can be a true American hero by serving your friends and family this treat, delivering maximum creamy tastiness whilst protecting your friends and family from the thoroughly un-patriotic sugar and dairy overloads 🙂

Ingredients

2 cups almond flour (almond flour has a nutty crunch and is great for gluten-free … a much healthier ingredient than graham cracker crumbs)

1/3 cup melted vegan spread (butter will work if you aren’t making it vegan)

8 tsp honey (or agave nectar for true vegan)

1/2 cup chopped coconut

1/3 cup chopped walnuts

1 1/3 cup vegan yoghurt (or Greek yoghurt if you don’t want it vegan)

2 tsp vanilla

1 lb vegan cream cheese (use regular cream cheese if you don’t want it vegan)

6 oz blueberries (you won’t need a whole tub, but some will inevitably get eaten along the way)

6 oz frozen raspberries (easier to chop when frozen, but you can use fresh ones if you prefer)

Step 1

Mix together the almond flour, 4 tsp of honey or agave nectar, melted vegan spread, coconut and chopped nuts. Pour onto a foil-lined pan.

Crisp the mixture in the oven at 300 degrees. This should take 7 – 12 minutes, depending on your oven. Check every few minutes and stir the mixture to avoid burning. Once crisp, remove foil and spread evenly on the pan, saving 3/4 cup of the mixture for later.

Beat together the Greek yoghurt, vanilla, 4tsp honey or agave nectar (add more for a sweeter mix), the cream cheese. Beat until very smooth.

Pour about half of the topping mixture on the crisp base and spread evenly.

Add the remaining crisp mixture on top and then add the remaining topping mixture. Smooth out again to leave your flag background.

Add your blueberries first to form the stars. Then add the chopped raspberries to make up the stripes. Put in the freezer to set. Remove 15 minutes before serving.
