I love crepes! Always have, always will! I remember a trip to France with my family when I was about six years old. There was a creperie in the village near to where we were staying. I would have gone there everyday if I could. The owner of the creperie made me a special crepe on my birthday.
Every year in February we celebrated Shrove Tuesday, AKA pancake day. We always made crepes, and I would eat stacks of them! Bottom line is, I love crepes. Sweet or savory, crepes rock! Try out this simple and healthy crepe to see if you love them as much as I do.
Simple Crepe Recipe
2 Eggs (Pasture-Raised)
1 Cup Milk (Organic Grass-Fed)
1 Cup Flour (Organic Sprouted Wheat)
1/2 Cup Water (Distilled)
1 teaspoon Coconut oil (for frying)
I always try to use the best ingredients I can find. Ingredients will make big difference in the quality of your cooking. I used organic pasture-raised eggs, organic grass-fed milk and organic sprouted wheat flour.
- In a mixer, food processor or mixing bowl with whisk, combine the eggs and the milk.
- Add the flour slowly and mix in thoroughly.
- Add the water and mix in. Be prepared to add more or less, depending on how thick your batter is.
- You can store the batter in the fridge for a day or two.
