Ingredients
5 cups diced pumpkin (1 inch cubes)
2 oz goat’s cheese
1 pack wonton sheets
1 cup sage (compress sage into cup)
3/4 cup shelled walnuts
3/4 cup grated parmesan
1 oz butter
4 cloves garllic
olive oil
salt & pepper
Make Your Raviolis
- Saute the pumpkin in the butter and the garlic on a low heat for about 15 – 20 minutes until the pumpkin becomes soft.
- Blend the pumpkin, the goat’s cheese and a sprinkle of the Parmesan until smooth.
- Lay out around 20 wonton sheets on some waxed paper.
- Using 2 teaspoons, spoon a heaping teaspoon of the mixture into the middle of each wonton sheet.
- Take another wonton sheet, wet the edge, place on top wet-side down and seal the edges.
Make Your Pesto
- Using a magic bullet or small food processor, blend together the sage, walnuts and half of the Parmesan, adding bit by bit.
- Add in some olive oil bit by bit until the pesto becomes a good consistency.
Cook raviolis with pesto. Serve and enjoy!
