Simple Pumpkin & Goat’s Cheese Ravioli Recipe

Ravioli made simple! Here’s my recipe for pumpkin and goat’s cheese ravioli with sage and walnut pesto with a video tutorial. This recipe makes it easy to cook this impressive and delicious meal. This is perfect for a family meal, as part of a larger spread, or as a special meal for a special someone. Follow along with the video to find out how you can prepare this tasty dish.

FBFL Pumpkin & Goat's Cheese Ravioli

Ingredients

5 cups diced pumpkin (1 inch cubes)

2 oz goat’s cheese

1 pack wonton sheets

1 cup sage (compress sage into cup)

3/4 cup shelled walnuts

3/4 cup grated parmesan

1 oz butter

4 cloves garllic

olive oil

salt & pepper

 

Make Your Raviolis

  1. Saute the pumpkin in the butter and the garlic on a low heat for about 15 – 20 minutes until the pumpkin becomes soft.
  2. Blend the pumpkin, the goat’s cheese and a sprinkle of the Parmesan until smooth.
  3. Lay out around 20 wonton sheets on some waxed paper.
  4. Using 2 teaspoons, spoon a heaping teaspoon of the mixture into the middle of each wonton sheet.
  5. Take another wonton sheet, wet the edge, place on top wet-side down and seal the edges.

Make Your Pesto

  1. Using a magic bullet or small food processor, blend together the sage, walnuts and half of the Parmesan, adding bit by bit.
  2. Add in some olive oil bit by bit until the pesto becomes a good consistency.

Cook raviolis with pesto. Serve and enjoy!
